Handvo

It is a healthy and tasty traditional Guajarati savory cake made with rice, lentil and vegetables. This recipe can be baked or made on a pan.

This  dish can be enjoyed for breakfast or as a snack with green chutney or tomato ketchup. (It tastes yummy by itself too😬.)

Ingredients :

  • Rice – 1 cup ( I used 1/2 cup raw rice + 1/2 cup idli rice)
  • Toor dal – 1/4 cup
  • Chana dal – 1/2 cup
  • Urad dal – 1tbsp
  • Curd – 1/2 cup
  • Grated carrot – 1/2 cup
  • Ginger garlic chilli paste – 1/2tsp
  • Finely chopped coriander leaves – 3tbsp
  • Finely chopped curry leaves – 3tbsp
  • Chili powder – 1/4tsp
  • Turmeric powder -‘1/4tsp
  • Hing – pinch
  • Sugar – 1/2tsp
  • Salt – 3/4tsp
  • Oil – 2tsp
  • Baking soda – 1/2tsp
  • Lemon juice – 1/2tsp

Instructions to bake:

  1. Soak dal and rice together for 4hrs.
  2. Drain off the water and transfer to a mixer.
  3. Add curd and blend to a smooth but slightly coarse paste.
  4. Transfer batter to a bowl and add carrot, coriander leaves, curry leaves, salt, sugar, turmeric powder, ginger garlic chili paste, red chili powder, oil and mix well.
  5. Now, add 1 tsp eno / fruit salt and mix gently, batter will become fluffy. I did not have eno, so, alternatively used baking soda and lemon juice in equal proportions.
  6. Transfer the batter to a greased baking pan.
  7. Preparation of tempering : Add 2tsp oil to the pan. Once the oil is hot, add mustard seeds. Once the mustanrd seeds splutters, add cumin seeds, few curry leaves and pinch hing. Pour the tempering to the batter.
  8. Preheat the oven and bake at 180 degree celsius for 45 minutes or till the handvo is cooked completely.
  9. Tadda, Handvo is ready to be served with green chutney or tomato ketchup.

Instructions to make on pan :

  1. Heat a pan with 2tsp of oil.
  2. Grease the pan with oil properly and transfer the batter to it.
  3. Now, add the tempering to it and cover and simmer for 5minutes (till the top layer is dried).
  4. Once done, flip the handvo gently and cover and simmer for another 5minutes or till handvo is cooked completely.
  5. Tadda, Handvo is ready to be served with green chutney or tomato ketchup.

Tips:

  • You can add more vegetables of your choice, to make it more nutritious.
  • While making on pan, simmer and cook, so that you don’t burn the handvo.
  • Make sure to add eno just before baking to make spongy handvo.
  • Make thin handvo on pan, so that it gets completely and uniformly cooked.
